- In a mixing bowl, combine shrimp with Shaoxing wine, salt, white pepper, and cornstarch. Let marinate for about 15 minutes.
- While shrimp marinates, whisk together chicken stock, oyster sauce, soy sauces, sugar, and cornstarch in a separate bowl.
- In a skillet, add water and bring to a boil. Add broccoli and steam for about 1 minute until bright green. Set aside.
- Heat peanut oil in the skillet. Add marinated shrimp in a single layer, searing undisturbed for about 1 minute.
- Flip shrimp, then add garlic and ginger, cooking for an additional 30 seconds to 1 minute.
- Pour in prepared sauce, add broccoli, and stir for about 2 minutes until sauce thickens.
- Remove from heat and serve hot, over rice or noodles.
