  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
Toppings
  • 1 cup Cooked rice
  • 1 cup Black beans
  • 1 cup Corn
  • 1 avocado Diced avocado
  • 1 cup Fresh cilantro For garnish

Method
 

Cooking Instructions
  1. In a mixing bowl, combine chipotle in adobo sauce, lime juice, garlic, olive oil, and cumin to create the marinade.
  2. Add the shrimp to the marinade, tossing to coat evenly. Let it marinate for 15 minutes.
  3. Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until the shrimp is opaque and cooked through.
  4. In serving bowls, layer cooked rice, black beans, corn, cooked shrimp, and diced avocado.
  5. Garnish with fresh cilantro before serving.
