  • 300 g Mixed Berries (strawberries, blueberries, raspberries) Fresh or frozen
  • 10 g Gelatine Use agar-agar for vegetarian option
  • 50 ml Elderflower Cordial Optional but recommended
  • 1 Oranges Zested and juiced
For Serving
  • 200 g Whipped Greek Yogurt For creaminess
  • 5 Fresh Mint Sprigs For garnish
  • 30 g Dark Chocolate (70%) Used as a garnish
  • 100 g Sponge Fingers Can substitute with ladyfingers
  • 2 cups Ice Cubes Helps chill the mixture quickly

Method
 

Step-by-Step Instructions
  1. Prepare Gelatin: Soak gelatin leaves in cold water for about 5 minutes until softened.
  2. Blend Berries: In a food processor, blend mixed berries until smooth, then strain through a sieve.
  3. Heat Mixture: Pour the puree into saucepan, warm it with soda water and elderflower cordial for about 3-5 minutes.
  4. Dissolve Gelatin: Remove from heat, squeeze excess water from gelatin, and stir into the warm mixture until dissolved.
  5. Chill: Pour mixture into molds and refrigerate for 2-3 hours until set.
  6. Assemble and Serve: Remove jellies from molds, top with whipped Greek yogurt, garnish with mint, and drizzle with orange juice.
