For the Steak
  • 1 lb Sirloin Steak about 1-inch thick
  • 3 tablespoons Olive Oil for cooking
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon Juice for marinade
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • Salt & Pepper to taste
For the Base
  • 2 cups Cooked Grains brown rice, quinoa, or cauliflower rice
  • 1 cup Roasted Chickpeas optional
For the Fresh Toppings
  • 1 cup Cherry Tomatoes halved
  • 1 whole Cucumber diced
  • 0.5 whole Red Onion thinly sliced
  • 0.5 cup Kalamata Olives
  • 0.33 cup Feta Cheese crumbled, optional
  • 0.25 cup Fresh Herbs parsley or dill, chopped
For the Creamy Tzatziki
  • 1 cup Greek Yogurt or coconut yogurt for dairy-free
  • 0.5 whole Cucumber grated and squeezed dry
  • 1 tablespoon Fresh Dill chopped
  • Honey optional
  • 1 clove Garlic minced for vinaigrette
  • 0.5 teaspoon Dried Oregano for vinaigrette
  • 2 tablespoons Lemon Juice for vinaigrette

Method
 

Step‑by‑Step Instructions
  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, thyme, and salt and pepper. Marinate the steak for at least 30 minutes.
  2. Make the tzatziki by mixing Greek yogurt, grated cucumber, fresh dill, and a pinch of salt. Refrigerate.
  3. Whisk together lemon juice, minced garlic, dried oregano, and olive oil for the vinaigrette, and set aside.
  4. Sear the marinated steak in a skillet over medium-high heat for 4-5 minutes on each side. Let it rest for 5 minutes before cutting.
  5. Assemble the bowls with cooked grains, sliced steak, fresh toppings, feta, and herbs.
  6. Drizzle tzatziki and vinaigrette over the bowls and serve.
