  • 1 pound Ground Beef or Italian sausage or plant-based alternative
  • 1 cup Spaghetti Sauce your favorite jarred brand or homemade
  • 15 ounces Ricotta Cheese cottage cheese is a great substitute
  • 2 cups Shredded Mozzarella Cheese can substitute with cheddar
  • 1 large Egg for a vegan option, use a flax egg
For the Flavor
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Italian Seasoning or use individual dried herbs
For the Cups
  • 24 pieces Wonton Wrappers or egg roll wrappers, can be gluten-free

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium-high heat. Stir and break apart until well browned, about 7-10 minutes. Drain excess fat, then mix in spaghetti sauce and ¼ cup of mozzarella. Set aside to cool.
  3. In a mixing bowl, combine ricotta cheese, egg, garlic powder, and Italian seasoning. Mix until smooth and creamy.
  4. Grease a 12-cup muffin tin to prevent sticking.
  5. Layer 2 wonton wrappers in each muffin tin slot. Spoon in 2 tablespoons of the meat mixture, followed by 1-2 tablespoons of the cheese mixture. Top with another spoonful of meat and sprinkle remaining mozzarella.
  6. Bake in the preheated oven for 12-15 minutes until wonton wrappers are golden brown and cheese is melted.
  7. Let the Easy Lasagna Cups cool for 5-10 minutes before serving.
