Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and gather your ingredients.
  2. Drizzle olive oil in a preheated skillet. Season chicken with salt and pepper, cook for 5-6 minutes until browned, then remove from skillet.
  3. In the same skillet, add more olive oil if needed, then sauté onions for 2-3 minutes. Add garlic, red bell pepper, and zucchini, cook for 3-4 minutes.
  4. Stir in spinach until wilted, then add oregano, thyme, and red pepper flakes.
  5. Add orzo pasta, chicken broth, and lemon juice, stir until well combined and bubbling.
  6. Return chicken to the skillet, cover, and bake for 25-30 minutes until orzo is tender.
  7. Uncover and sprinkle with feta, parsley, and olives, then bake for an additional 5 minutes.
