  • 1-2 inches Ginger Peeled and minced.

Step‑By‑Step Instructions
  1. Marinate the shrimp by mixing minced ginger, garlic, soy sauce, water, mirin, sake, rice wine vinegar, and brown sugar; coat the shrimp and refrigerate for 30 minutes to 1 hour.
  2. Prep the vegetables by slicing them and grouping based on cooking times.
  3. Stir-fry the shrimp in hot oil until opaque, about 2 minutes; set aside.
  4. Cook onions in the same pan for about 2 minutes until golden.
  5. Add carrots, zucchini, broccoli, and jalapeño; stir-fry for 1-2 minutes.
  6. Add mushrooms and scallions; stir-fry for another 1-2 minutes.
  7. Combine the noodles and reserved marinade; cook for 3 minutes then return shrimp to the pan and serve hot.
