Prepare the Crust
- Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper for easy removal. In a mixing bowl, beat together softened unsalted butter and light brown sugar until creamy. Add in all-purpose flour and salt, combining until crumbly. Press the mixture into the prepared pan and prick the surface with a fork.
Bake the Crust
- Bake for about 28-32 minutes, or until lightly golden around the edges. Let it cool slightly.
Make the Filling
- Whisk together pumpkin purée, eggs, granulated sugar, pumpkin pie spice, heavy cream, and vanilla extract until smooth and fully blended. Set aside.
Combine and Bake
- Pour filling over the baked crust and spread evenly. Bake for an additional 32-35 minutes until the filling is set with a slight jiggle in the center.
Cool and Serve
- Allow to cool in the pan for 30 minutes. Lift the bars out using parchment paper. Optionally, top with whipped sour cream before slicing.
