Ingredients

For the Dough
  • 1 cup Lilac Blossoms Ensure blossoms are fresh and pesticide-free.
  • 1/2 cup Granulated Sugar Consider coconut sugar for a healthier option.
  • 1 cup Milk Whole milk works best, but almond or oat milk can be used for dairy-free.
  • 1/4 cup Butter Use unsalted for more control over sweetness.
  • 3 cups All-Purpose Flour Substitute with gluten-free flour if desired.
  • 2 teaspoons Active Dry Yeast Ensure it’s fresh for perfect dough.
  • 2 large Eggs Flaxseed eggs are a suitable vegan alternative.
  • 1 teaspoon Vanilla Extract Almond extract can be used for a unique twist.
  • 2 cups Neutral Cooking Oil Canola oil works well for frying.
For the Lilac Sugar
  • 1/2 cup Lilac Petals Rub petals into sugar to activate the flavors.

Equipment

  • Saucepan
  • Mixing Bowl
  • Donut cutter
  • Deep fryer
  • wire rack

Method

Preparation
  1. Rub fresh lilac petals into granulated sugar, allowing flavors to infuse for at least 30 minutes.
  2. In a saucepan, heat milk until simmering, add lilac blossoms, steep for 10 minutes, then strain.
  3. Combine lilac sugar, infused milk, melted butter, eggs, flour, yeast, and salt in a bowl until shaggy dough forms.
  4. Knead dough on a floured surface for about 6 minutes, shape it into a ball, and let rise in greased bowl until doubled, about 1 hour.
  5. Roll out dough to 1/2-inch thickness, cut shapes with a donut cutter, and allow to rise on a baking sheet for 30-45 minutes.
  6. Heat oil to 350°F, fry donuts for 2 minutes on each side until golden brown. Transfer to wire rack to cool.
  7. Roll warm donuts in lilac sugar to coat them completely for a sweet finish.
