- In a medium mixing bowl, beat together cream cheese, crushed pineapple, and powdered sugar using an electric mixer on medium speed until completely smooth and well blended, about 3–5 minutes.
- Gently fold in coconut flakes and chopped pecans into the creamy mixture. If desired, add a splash of lime juice for a zesty twist.
- Cover the bowl with plastic wrap and place it in the refrigerator for about 20 minutes.
- After chilling, remove the mixture from the refrigerator. Using your hands, scoop out small portions (about 1 tablespoon each) and roll them into smooth balls.
