- Preheat the oven to 350°F (180°C) and prepare the cake pan.
- In a medium bowl, combine sliced peaches with additional sugar and set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut the cold butter into small pieces and mix into the dry ingredients until crumbly.
- Add the egg to the mixture and mix gently until just combined.
- Press half of the crumb mixture into the cake pan, layer the peaches, then sprinkle the remaining crumb on top.
- Bake for 30-40 minutes until golden and a toothpick comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack.
