Ingredients
  

For the Sweet Potatoes
  • 2 large Sweet Potatoes Can substitute with mashed sweet potatoes or roasted baby potatoes for variety.
  • 2 tablespoons Avocado Oil Can substitute with olive oil.
  • 1 teaspoon Garlic Powder Substitute with fresh garlic if preferred.
  • 1 teaspoon Paprika Consider smoked paprika for extra flavor.
For the Sloppy Joe Mixture
  • 1 medium Yellow Onion Finely chopped.
  • 1 medium Bell Pepper Any color bell pepper.
  • 1 pound Lean Ground Beef Can substitute with ground turkey.
  • 2 tablespoons Tomato Paste Can replace with fresh chopped tomatoes.
  • 1 tablespoon Mustard Yellow or Dijon.
  • 1 tablespoon Apple Cider Vinegar Balsamic vinegar can be used as a substitute.
  • 2 tablespoons Coconut Aminos Can substitute with low-sodium soy sauce.
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (204°C) for roasting the sweet potatoes.
  2. Wash and cube the sweet potatoes into ½-¾ inch pieces. In a large bowl, combine with avocado oil, garlic powder, paprika, salt, and pepper.
  3. Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper and roast for about 18-26 minutes, tossing halfway through.
  4. In a large skillet over medium heat, add a tablespoon of oil. Add onions and bell peppers, sauté for 3-5 minutes until softened.
  5. Add the ground beef, breaking it apart, and cook until browned for about 5-7 minutes.
  6. Stir in the tomato paste, mustard, apple cider vinegar, coconut aminos, and season with salt and pepper. Simmer for 8-10 minutes until thickened.
  7. Assemble by dividing the roasted sweet potatoes in serving bowls and topping with the sloppy joe mixture.

Notes
