- Preheat your oven to 400°F (204°C) for roasting the sweet potatoes.
- Wash and cube the sweet potatoes into ½-¾ inch pieces. In a large bowl, combine with avocado oil, garlic powder, paprika, salt, and pepper.
- Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper and roast for about 18-26 minutes, tossing halfway through.
- In a large skillet over medium heat, add a tablespoon of oil. Add onions and bell peppers, sauté for 3-5 minutes until softened.
- Add the ground beef, breaking it apart, and cook until browned for about 5-7 minutes.
- Stir in the tomato paste, mustard, apple cider vinegar, coconut aminos, and season with salt and pepper. Simmer for 8-10 minutes until thickened.
- Assemble by dividing the roasted sweet potatoes in serving bowls and topping with the sloppy joe mixture.
