- Preheat your oven to 425°F (220°C). Spread the waffle fries on a baking sheet lined with parchment paper. Bake according to package instructions for about 20-25 minutes, flipping halfway through.
- Remove the fries and let cool slightly. Spread a layer of fries back onto the baking sheet, overlapping slightly.
- Evenly distribute the shredded corned beef over the fries. Spoon dollops of sauerkraut on top.
- Sprinkle Emmental cheese over the toppings. Return to the oven and bake for an additional 10-12 minutes, until the cheese is melted.
