Step-by-Step Instructions for Creamy Cajun Oyster Stew
  1. Melt 1/4 cup of unsalted butter in a large pot over medium-high heat. Stir in 1/4 cup of all-purpose flour for about 5 minutes until light golden brown.
  2. Add the chopped onion, celery, and bell pepper. Cook for 2 minutes until softened and fragrant.
  3. Pour in 2 cups of whole milk and 1 cup of oyster liquor. Stir in 2 teaspoons of Cajun seasonings, salt, and pepper. Cook for 3-4 minutes until slightly thickened.
  4. Add 1 pint of oysters, chopped parsley, sliced green onions, minced garlic, and hot sauce. Bring to a gentle boil for another 3-4 minutes.
  5. Remove from heat, garnish with additional parsley and chili flakes. Serve hot with crunchy soda crackers.
