Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and line a baking dish with cooking spray or oil.
  2. Sauté the chopped onion in a skillet over medium heat until translucent, about 5 minutes.
  3. Mix the sautéed onions with the refried beans and half of the shredded cheese until creamy.
  4. Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
  5. Spoon a generous portion of the filling onto each tortilla, roll them up tightly, and place seam-side down in the baking dish.
  6. Pour the green enchilada sauce evenly over the top of the enchiladas.
  7. Sprinkle the remaining shredded cheese over the enchiladas.
  8. Bake in the preheated oven for about 20-25 minutes until bubbling and golden brown.
  9. Let the enchiladas rest for a few minutes, then top with sour cream, cilantro, and lime juice before serving.
