  • 4 fillets Tilapia can substitute with cod or haddock
  • 2 tablespoons Olive Oil can use avocado oil as alternative
For the Roasted Pepper Sauce
  • 2 medium Red Bell Peppers can enhance with yellow or orange peppers
  • 2 cloves Garlic use fresh for best flavor
  • 2 tablespoons Lemon Juice white vinegar can be a substitute
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper.
  2. Slice the red bell peppers into quarters, place on the baking sheet, drizzle with olive oil, and season with salt and pepper. Toss and roast for about 20 minutes.
  3. Blend the roasted peppers with minced garlic and lemon juice until smooth. Set aside.
  4. Heat olive oil in a skillet over medium heat. Season tilapia with salt and pepper and sauté for 3-4 minutes on each side until golden brown.
  5. Pour the roasted pepper sauce over the cooked tilapia and simmer for 1-2 minutes. Serve immediately.
