- Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper.
- Slice the red bell peppers into quarters, place on the baking sheet, drizzle with olive oil, and season with salt and pepper. Toss and roast for about 20 minutes.
- Blend the roasted peppers with minced garlic and lemon juice until smooth. Set aside.
- Heat olive oil in a skillet over medium heat. Season tilapia with salt and pepper and sauté for 3-4 minutes on each side until golden brown.
- Pour the roasted pepper sauce over the cooked tilapia and simmer for 1-2 minutes. Serve immediately.
