- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt until well combined.
- In a separate bowl, cream together ½ cup of softened unsalted butter and 1 cup of granulated sugar using an electric mixer until the mixture is light and fluffy, about 3 minutes.
- Beat in 2 large eggs and 1 teaspoon of vanilla extract. Gradually mix in the dry ingredients until just combined.
- Divide the dough into equal portions based on the number of colors you’d like to create. Add a few drops of gel food coloring to each portion and mix thoroughly until the colors are evenly distributed.
- Cover the dough tightly with plastic wrap and chill in the refrigerator for about 30 minutes.
- Preheat your oven to 350°F (175°C).
- Remove the dough from the fridge. Line a baking sheet with parchment paper. Scoop out portions of the dough and roll them into balls about 1 inch in diameter.
- Roll each dough ball in powdered sugar until fully coated.
- Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for about 12 minutes or until the edges are set and the centers look slightly soft.
- Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
