- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Drain the frozen chopped spinach and wrap it in a towel to squeeze out any excess moisture.
- In a mixing bowl, combine the drained spinach, crumbled feta cheese, and optional ricotta or cream cheese. Add minced garlic, herbs, egg, salt, and pepper. Mix until well combined.
- Roll out the puff pastry to about a quarter-inch thick and spread the filling evenly, leaving a small border around the edges.
- Starting from one edge, roll the pastry into a tight log and slice into 1-inch rounds. Arrange cut-side up on the baking sheet.
- Brush the tops with egg wash and sprinkle with seeds if desired. Bake for 18-22 minutes until golden brown and puffed up.
- Allow to cool slightly on the baking sheet before serving warm or at room temperature.
