Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain the frozen chopped spinach and wrap it in a towel to squeeze out any excess moisture.
  3. In a mixing bowl, combine the drained spinach, crumbled feta cheese, and optional ricotta or cream cheese. Add minced garlic, herbs, egg, salt, and pepper. Mix until well combined.
  4. Roll out the puff pastry to about a quarter-inch thick and spread the filling evenly, leaving a small border around the edges.
  5. Starting from one edge, roll the pastry into a tight log and slice into 1-inch rounds. Arrange cut-side up on the baking sheet.
  6. Brush the tops with egg wash and sprinkle with seeds if desired. Bake for 18-22 minutes until golden brown and puffed up.
  7. Allow to cool slightly on the baking sheet before serving warm or at room temperature.
