Step-by-Step Instructions
  1. Prepare the Watermelon Juice by cutting 4 cups of fresh watermelon into chunks and blending until smooth. Strain through a fine mesh sieve to extract 2 cups of juice.
  2. Heat half of the juice by pouring 1 cup into a small saucepan over low to medium heat, warming until steaming but not boiling (3-5 minutes).
  3. Bloom the gelatin by sprinkling 1 cup of unflavored gelatin powder over the remaining watermelon juice in a bowl. Let sit for 5-10 minutes.
  4. Combine the bloomed gelatin and warmed juice by whisking the gelatin mixture until smooth, then gradually pour in the warm juice while whisking continuously for 2-3 minutes.
  5. Add flavor enhancements by stirring in 2-3 tablespoons of lemon juice and optionally honey until well combined.
  6. Pour the mixture into silicone molds or a glass dish, smooth the surface if needed, and refrigerate for at least 2 hours to set.
  7. Unmold and cut gummies into desired shapes, ready to be enjoyed!
