Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
  3. Drizzle the florets with olive oil and sprinkle with ground cumin, ground coriander, smoked paprika, salt, and black pepper. Toss to coat evenly.
  4. Spread the seasoned cauliflower on a parchment-lined baking sheet. Roast for 20-25 minutes, turning halfway through.
  5. In a mixing bowl, whisk together tahini, honey (or maple syrup), lemon juice, and a pinch of salt until smooth. Add water if needed.
  6. Remove the cauliflower from the oven and place in a serving bowl. Drizzle with the tahini-honey sauce.
  7. Garnish with fresh parsley and sesame seeds before serving warm.
