  • 1 cup Plain Flour All-purpose flour, can substitute with self-raising flour
  • 1 teaspoon Baking Powder Ensure it’s fresh for best results
  • 2 Large Eggs Should be at room temperature
  • 1/2 cup Caster Sugar Superfine sugar, granulated sugar can also be used
  • 1 pinch Salt Enhances flavor in sweet baked goods
  • 1/4 cup Vegetable Oil Neutral-flavored oil
  • 1/4 cup Full-Fat Milk Low-fat milk is acceptable
  • 2 tablespoons Honey Can substitute with maple syrup
  • 1 teaspoon Vanilla Extract Use extract for best taste
  • 1 tablespoon Lemon Zest For a refreshing hint of citrus
  • 1/2 cup Unsalted Butter Melted and warm
  • 1 spray Canola Oil Spray For greasing the pan
  • Icing Sugar Optional For dusting before serving

Method
 

Step-by-Step Instructions
  1. Sift together flour and baking powder into a bowl and set aside.
  2. In a bowl, whisk eggs and sugar for about 2 minutes until pale and foamy.
  3. Gently fold in the dry ingredients in three parts into the egg mixture.
  4. Add salt, vegetable oil, milk, honey, vanilla, and lemon zest. Mix gently.
  5. Fold in melted butter until well combined, batter should be thin.
  6. Cover bowl with plastic wrap and refrigerate for at least 6 hours.
  7. Preheat oven to 200°C (390°F) and prepare the pan with canola spray.
  8. Transfer chilled batter to a piping bag and pipe into molds.
  9. Bake for about 10 minutes or until golden brown.
  10. Remove from oven, unmold, and dust with icing sugar before serving.
