Preparation
- Wash the potatoes thoroughly under running water to remove dirt. Cut them into one-inch pieces and set aside.
- In a mixing bowl, combine soy sauce, sugar, sesame oil, and water, whisking until the sugar has dissolved. Set the sauce aside.
- Heat oil in a non-stick pan over medium heat. Add the potato pieces in a single layer and sauté for 5-6 minutes until lightly golden.
- Pour the sauce mixture over the sautéed potatoes, cover and simmer for 5-7 minutes over medium-low heat.
- Remove the lid, and let the sauce simmer uncovered for another 3-5 minutes, stirring gently until a thick glaze forms.
- Once glazed, remove from heat and sprinkle with toasted sesame seeds before serving.
