  • 3 tablespoons Honey
  • 2 tablespoons Fresh Lime Juice
  • 1 teaspoon Lime Zest
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Bowl

  • 1 large Avocado
  • 1 cup Cherry Tomatoes
  • 1 cup Corn Kernels
  • 1/2 large Red Onion, sliced
  • 1/4 cup Fresh Cilantro

  • 1/2 cup Greek Yogurt/Sour Cream
  • 1 teaspoon Chili Flakes

Method
 

Marinade Preparation
  1. In a medium bowl, whisk together honey, fresh lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and black pepper until well combined.
  2. Place the chicken breasts into the marinade, ensuring they are fully submerged. Cover the bowl and let it marinate in the refrigerator for 10-15 minutes.
Cooking the Chicken
  1. Heat a large skillet over medium heat, adding a drizzle of olive oil. Once hot, add the chicken to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through.
  2. Transfer cooked chicken to a cutting board and let it rest for about 5 minutes before slicing into strips.
