  • 2 cups Fresh Corn Kernels or 1 can, drained
  • 1 cup Creamed Corn
  • 1 cup Sour Cream or Greek yogurt
  • 1 cup Shredded Cheddar Cheese or Monterey Jack
  • 1/2 cup Honey or maple syrup/agave nectar
  • 1/2 cup Unsalted Butter, melted or olive oil
  • 1 cup Cornmeal
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 2 large Beaten Eggs
  • Chopped Chives or Parsley for garnish

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine corn kernels, creamed corn, sour cream, cheddar cheese, honey, and melted butter. Stir until well incorporated.
  3. In a separate bowl, whisk together cornmeal, baking powder, salt, black pepper, and garlic powder.
  4. Gradually add the dry mixture to the wet bowl, stirring gently until combined.
  5. Fold in the beaten eggs until the mixture is cohesive.
  6. Grease a 9x13 inch baking dish and pour in the corn mixture, spreading evenly.
  7. Bake for 35-40 minutes until golden brown and a toothpick inserted comes out clean.
  8. Let it cool briefly and garnish with chives or parsley before serving.
