  • 3 tbsp Lime Juice fresh is crucial for optimal flavor
  • 3 tbsp Fish Sauce soy sauce can be a less pungent alternative
Salad
  • 3/4 cup Roasted Peanuts unsalted preferred
  • 5-6 Snake Beans raw, can substitute with French beans
  • 10 Grape Tomatoes cut in half
  • 1 medium Green Papaya shredded, can substitute with green mango
  • 1 cup Thai Basil Leaves substitute with coriander if desired

Method
 

Step-by-Step Instructions
  1. Pound garlic and bird eye chilies into a fragrant paste in a mortar, about 3-5 minutes. Add dried shrimp and lightly crush. Stir in palm sugar, lime juice, and fish sauce until dissolved.
  2. Pound each snake bean to soften and release flavors, add to dressing after about 2 minutes per bean.
  3. Slice grape tomatoes in half and gently crush. Add to mortar with dressing.
  4. Combine shredded green papaya and 3/4 of peanuts with the dressing. Toss for 1-2 minutes to coat.
  5. Transfer to serving bowls, add remaining dressing, garnish with Thai basil and peanuts, and serve immediately.
