Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and prepare a baking dish by lightly greasing it with olive oil.
  2. Soak the rice in water for about 20 minutes. Drain and set aside.
  3. Boil the yellow onions for 10-15 minutes until the outer layers are tender.
  4. Blend grated tomato and tomato paste, seasoning with salt, pepper, and oregano. Set aside.
  5. In a skillet, sauté diced onions and minced garlic in olive oil for 5-7 minutes until softened. Add ground beef and cook until browned.
  6. Lower heat and mix in drained rice, grated tomato, lemon juice, parsley, mint, salt, and pepper. Let simmer for 8-10 minutes.
  7. Stuff the boiled onions with the filling, rolling the edges to secure.
  8. Place the stuffed onions in the baking dish, pour the reserved tomato sauce on top.
  9. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 25-30 minutes until tender.
