Preparation Steps
- Preheat your oven to 425°F (220°C) and prepare a baking dish by lightly greasing it with olive oil.
- Soak the rice in water for about 20 minutes. Drain and set aside.
- Boil the yellow onions for 10-15 minutes until the outer layers are tender.
- Blend grated tomato and tomato paste, seasoning with salt, pepper, and oregano. Set aside.
- In a skillet, sauté diced onions and minced garlic in olive oil for 5-7 minutes until softened. Add ground beef and cook until browned.
- Lower heat and mix in drained rice, grated tomato, lemon juice, parsley, mint, salt, and pepper. Let simmer for 8-10 minutes.
- Stuff the boiled onions with the filling, rolling the edges to secure.
- Place the stuffed onions in the baking dish, pour the reserved tomato sauce on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 25-30 minutes until tender.
