- Preheat your oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chopped red onion and red bell pepper, sautéing for about 5 minutes.
- Sprinkle in ground cumin, chili powder, kosher salt, ground black pepper, and minced garlic. Cook for an additional minute.
- Stir in diced tomatoes with green chilies, black beans, frozen corn, shredded cooked chicken, and salsa. Heat through for about 3–4 minutes.
- Layer half of the crushed tortilla chips at the bottom of a 9×13-inch baking dish. Pour the warm chicken mixture over the chips, top with remaining chips and a generous layer of shredded cheese.
- Bake for 20–25 minutes until cheese is melted and bubbly.
- Remove from oven and let rest for a few minutes. Garnish with chopped cilantro and sour cream before serving.
