For the Marinade
  • 3 tablespoons Olive Oil
  • 2 teaspoons Ground Cumin
  • 1 tablespoon Paprika or smoked paprika for bolder flavor
  • 1 teaspoon Turmeric
  • 1 teaspoon Ground Coriander or parsley as a substitute
  • 1 teaspoon Ground Cinnamon optional
  • 4 cloves Minced Garlic fresh preferred
  • 2 tablespoons Lemon Juice
  • to taste pinch Salt & Pepper
For the Chicken
  • 1 pound Chicken Thighs or Breasts Use thighs for juiciness
For the Garlic Sauce
  • 1/2 cup Mayo or Greek yogurt for a tangy twist

Method
 

Marinating and Cooking
  1. In a large bowl, combine olive oil, ground cumin, paprika, turmeric, ground coriander, ground cinnamon, minced garlic, lemon juice, salt, and pepper. Add chicken and coat well, then marinate for at least 30 minutes.
  2. Preheat a grill or non-stick pan over medium-high heat, adding oil to prevent sticking.
  3. Cook marinated chicken for 5-7 minutes on each side, checking for golden crust and an internal temperature of 165°F (75°C).
  4. While chicken is cooking, whisk mayo, minced garlic, lemon juice, and salt in a small bowl until smooth.
  5. Once cooked, let chicken rest for a few minutes, then slice against the grain and serve in warm pitas or on plates with garlic sauce and veggies.
