  • 2 cups Tomatoes Any ripe tomatoes; cherry or grape for sweetness
  • 1 small Red Onion Soak in cold water for milder flavor
  • 1 cup Fresh Parsley Optional; can substitute dill or basil
For the Dressing
  • 1/4 cup Extra-Virgin Olive Oil High-quality for best flavor
  • 2 tablespoons Red Wine Vinegar Or use lemon juice
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper Adjust to taste
  • 1 teaspoon Dried Oregano Optional

Method
 

Preparation
  1. Wash cucumbers, tomatoes, and red onion under cool running water and pat dry.
  2. Cut cucumbers and tomatoes into bite-sized pieces.
  3. Slice the red onion into thin rings and soak in cold water for about 10 minutes.
  4. Drain the onion and pat dry.
  5. In a large bowl, gently combine chopped cucumbers, tomatoes, and onions.
Dressing and Assembly
  1. In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), salt, and black pepper.
  2. If using, finely mince garlic and let it rest in the dressing for about 5 minutes.
  3. Pour the dressing over the vegetable mixture and gently toss.
  4. Sprinkle chopped parsley over the salad and fold gently into the mixture.
  5. Let the salad sit at room temperature for 10-15 minutes before serving.
