- Wash and peel the Persian cucumbers, then julienne them into thin strips and place in a colander. Lightly sprinkle with salt and let rest for 5-10 minutes.
- Gently squeeze cucumber strips to remove accumulated moisture and set aside in a large mixing bowl.
- Shred the imitation crab meat into fine, bite-sized pieces and set aside in a separate bowl.
- In a medium bowl, whisk together mayo, vinegar, garlic powder, sugar, and freshly cracked pepper until smooth.
- Add dry cucumber strips and shredded crab meat into the dressing and fold gently to coat.
- Sprinkle with sesame seeds or fresh herbs, chill for about 15 minutes, and then serve.
