Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking tray with aluminum foil. Place a wire rack on top and spray lightly with canola oil.
  2. Gather three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. In a small bowl, mix dried oregano, basil, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Add 1 tbsp to the flour and mix well.
  4. Coat each drumstick in the flour mixture, then dip in egg, and finally coat in seasoned panko breadcrumbs.
  5. Arrange drumsticks on the wire rack. Space them out to allow even cooking, and spray with canola oil.
  6. Bake in the oven for 25 minutes, flip them over, spray with oil again, and bake for an additional 20 minutes until golden and crispy.
  7. Let cool for 5 minutes before serving with your favorite sides.
