- Preheat your oven to 200°C (400°F) and line a baking tray with aluminum foil. Place a wire rack on top and spray lightly with canola oil.
- Gather three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- In a small bowl, mix dried oregano, basil, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Add 1 tbsp to the flour and mix well.
- Coat each drumstick in the flour mixture, then dip in egg, and finally coat in seasoned panko breadcrumbs.
- Arrange drumsticks on the wire rack. Space them out to allow even cooking, and spray with canola oil.
- Bake in the oven for 25 minutes, flip them over, spray with oil again, and bake for an additional 20 minutes until golden and crispy.
- Let cool for 5 minutes before serving with your favorite sides.
