- In a medium bowl, combine sugar, sesame seeds, minced garlic, finely chopped green onion, soy sauce, rice vinegar, chili oil, and sesame oil. Whisk until sugar dissolves.
- Trim the ends of the cucumbers. Make accordion cuts down the length using chopsticks to guide your knife. Then slice crosswise into bite-sized spirals.
- Place cucumber spirals in a bowl and sprinkle with salt. Massage salt in and let sit for 8-10 minutes.
