For the Creamy Dressing
  • 1/2 cup Plain Greek Yogurt Provides creaminess.
  • 1/4 cup Mayonnaise For extra creaminess.
  • 1 each Fresh Orange Juice Juice of one orange.
  • 1/2 each Lemon Juice Juice of half a lemon.
  • 1 tablespoon Honey For sweetness.
  • 1 pinch Salt Essential seasoning.
  • 1 pinch Pepper Essential seasoning.

Method
 

Instructions
  1. Begin by peeling and grating 2 large carrots using a box grater or food processor.
  2. Core and dice 2 crisp apples into bite-sized pieces and add them to the carrots.
  3. Finely shred 1 cup of red cabbage and add it to the mixing bowl.
  4. Mix in 1/2 cup of dried fruits and 1/2 cup of chopped nuts.
  5. In a separate bowl, combine 1/2 cup of plain Greek yogurt, 1/4 cup of mayonnaise, and the citrus juices.
  6. Whisk until smooth, then add 1 tablespoon of honey and pinch of salt and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Taste and adjust seasoning, then cover and refrigerate for at least 15 minutes.
  9. Serve chilled or at room temperature, garnished with additional nuts and parsley.
