- Begin by peeling and grating 2 large carrots using a box grater or food processor.
- Core and dice 2 crisp apples into bite-sized pieces and add them to the carrots.
- Finely shred 1 cup of red cabbage and add it to the mixing bowl.
- Mix in 1/2 cup of dried fruits and 1/2 cup of chopped nuts.
- In a separate bowl, combine 1/2 cup of plain Greek yogurt, 1/4 cup of mayonnaise, and the citrus juices.
- Whisk until smooth, then add 1 tablespoon of honey and pinch of salt and pepper.
- Pour the dressing over the salad and toss to combine.
- Taste and adjust seasoning, then cover and refrigerate for at least 15 minutes.
- Serve chilled or at room temperature, garnished with additional nuts and parsley.
