Step-by-Step Instructions
  1. Brown the beef: In a large skillet over medium heat, add the lean ground beef, diced yellow onion, chopped green bell pepper, and minced garlic. Cook for about 7–10 minutes until the beef is browned.
  2. Transfer to slow cooker: Once the beef mixture is cooked, drain any excess fat and transfer it to a large slow cooker.
  3. Add remaining ingredients: Add sweet potato, Yukon gold potatoes, chopped carrots, diced celery, fire-roasted diced tomatoes, tomato paste, beef broth, and Italian seasoning. Mix well.
  4. Set cooking time: Cover and cook on low for 8–9 hours or high for 5–6 hours.
  5. Add green beans and kale: Stir in green beans and kale during the last hour of cooking.
  6. Final seasoning: Taste the soup and adjust seasoning with additional salt and pepper if necessary.
