  • 1 lb Ground beef or ground turkey/plant-based crumbles
For the Vegetables
  • 4 cups Russet potatoes, chopped or Yukon gold/red potatoes
  • 2 cups Carrots, sliced or parsnips
  • 1 cup Celery, diced or extra onion/celery seed
For the Aromatics
  • 1 medium Yellow onion, diced or sweet onion/shallots
  • 3 cloves Garlic, minced or garlic powder (1 tsp per clove)
For the Broth
  • 1 can (14.5 oz) Diced tomatoes or crushed tomatoes/tomato sauce
  • 1 can (8 oz) Tomato sauce add sugar if too acidic
  • 1 can (15 oz) Kidney beans or pinto/black beans
  • 4 cups Beef broth or chicken/vegetable broth
For Seasoning
  • 2 tbsp Worcestershire sauce or soy sauce/coconut aminos
  • 1 tbsp Paprika
  • 1 leaf Bay leaf
  • 1 tsp Thyme

Method
 

Step-by-Step Instructions
  1. In a medium skillet, brown the ground beef for 4–5 minutes. Add diced onion and sauté 3 minutes. Stir in minced garlic for 30 seconds, then set aside.
  2. In your slow cooker, layer chopped potatoes, sliced carrots, diced celery, and rinsed beans. Add diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and spices. Spoon browned beef on top and stir to combine.
  3. Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours until veggies are fork-tender and broth thickens.
  4. Remove bay leaf. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh parsley or sour cream if desired.
