- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, eggs, minced garlic, chopped onion, fresh parsley, salt, pepper, and Italian seasoning.
- Using your hands, scoop out portions of the mixture and form them into small balls, 1 to 1½ inches in diameter. Place them on the prepared baking sheet.
- Bake for about 20–25 minutes, flipping halfway through until golden brown and crispy.
