Cooking Instructions
  1. Preheat your oven to 450°F (232°C) and prepare a baking sheet by lining it with parchment paper or greasing it with olive oil.
  2. Combine chicken tenders with 2 tablespoons of brown rice flour, garlic powder, onion powder, flaked sea salt, and black pepper in a bowl. Toss until evenly coated.
  3. In a separate bowl, whisk together 3/4 cup of brown rice flour, shredded coconut, smoked paprika, ground turmeric, and lime zest. Gradually mix in buttermilk until a thick batter forms.
  4. Dip each seasoned chicken tender into the batter, ensuring a generous coat. Arrange on the prepared baking sheet and drizzle with olive oil.
  5. Bake in the preheated oven for 10 minutes, checking for a light golden color.
  6. After 10 minutes, add remaining batter on top and drizzle with olive oil. Return to the oven for an additional 15 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  7. Prepare a sauce by mixing mayonnaise, buffalo sauce, ketchup, garlic powder, and black pepper to taste until smooth.
