Step-by-Step Instructions
  1. Press a block of extra firm tofu for 15 minutes. Cut into 1-inch cubes, toss with olive oil, salt, and pepper, and set aside.
  2. Preheat the oven to 400°F (200°C). Spread seasoned tofu cubes on a baking sheet and bake for 25-30 minutes, flipping halfway through.
  3. Heat olive oil in a skillet, add minced garlic, and sauté until golden, about 1-2 minutes.
  4. Add halved cherry tomatoes to the skillet, cook for 3-5 minutes until softened.
  5. Incorporate balsamic vinegar and maple syrup into the skillet and simmer for 2-3 minutes, add red pepper flakes if desired.
  6. Fold crispy tofu into the tomato mixture, toss gently, garnish with fresh basil, and serve hot.
