- Pat the chicken tenderloins dry and season with kosher salt, paprika, garlic powder, and black pepper.
 - Set up a dredging station with flour, whisked eggs, and panko mixed with salt and pepper.
 - Coat the chicken tender in flour, dip in eggs, and roll in panko before placing on a greased rack.
 
Cooking
- Preheat the air fryer to 400ºF and spray the basket and chicken with avocado oil.
 - Cook the chicken in batches for about 10-14 minutes until golden brown and 165ºF inside.
 - Melt butter in a saucepan, stir in honey and curry paste, and adjust with water if needed.
 - Toss the warm curry sauce with the cooked chicken tenders until evenly coated.
 - Serve the chicken tenders on a platter and sprinkle with chopped scallions.
