  • Avocado Oil for frying

  • 1/2 cup Vegan Sour Cream or Mayo store-bought works well
  • 1 tablespoon Sriracha to taste
  • Green Onions for garnish

Method
 

Step-by-Step Instructions
  1. Prepare the flax egg by mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it thicken.
  2. In a bowl, combine the thickened flax mixture with chopped kimchi, drained corn, toasted sesame oil, and tamari.
  3. Gently fold in cooked and cooled rice along with brown rice flour until you have a thick batter.
  4. Heat a layer of avocado oil in a skillet; check readiness by dropping in batter.
  5. Drop portions of batter into the hot oil, flatten, and cook until golden brown on both sides.
  6. Remove cooked fritters, drain on paper towels, and keep warm in a low oven.
  7. Mix vegan sour cream with sriracha for optional dipping sauce and stir until smooth.
  8. Garnish fritters with sliced green onions and serve warm with dipping sauce.
