Preparation
- Toss the prawns with kosher salt and dust them with cornflour. Set aside.
- In a bowl, mix cornflour, all-purpose flour, baking powder, and salt. Add soda water and stir until just combined.
- Heat oil in a deep pan or wok to 160°C (320°F) and fry the prawns for about 3 minutes until golden.
- In a saucepan, combine honey, glucose, soy sauce, and cooking wine. Simmer until thickened.
- Increase oil temperature to 200°C (390°F) and fry prawns again until deep golden brown.
- Toss hot prawns in honey sauce and serve over crispy vermicelli rice noodles, garnished with sesame seeds and green onions.
