Method
 

Preparation
  1. In a large bowl, combine chicken breasts with dill pickle juice. Cover and marinate for at least 30 minutes.
  2. Set up a breading station with flour mixed with salt and pepper in one bowl, whisked eggs in the second, and breadcrumbs mixed with Parmesan in the third.
  3. Heat oil in a skillet over medium heat until it reaches 350°F (175°C).
  4. Remove chicken from marinade, dredge in flour, dip in eggs, and coat with breadcrumb-Parmesan mixture.
  5. Fry the chicken for 5-7 minutes on each side until golden brown and cooked through.
  6. Remove chicken and drain on paper towels to absorb excess oil.
  7. Let the fried chicken rest for 5-10 minutes on a cooling rack or plate.
  8. Serve hot with your favorite sides.
