  • 2 each Apples sliced, such as Gala or Honeycrisp
  • cup Walnuts toasted, chopped
  • ¼ cup Parmesan Cheese shaved
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Apple Cider Vinegar
  • 2 teaspoons Honey
  • 1 teaspoon Dijon Mustard
  • Salt to taste
  • Freshly Cracked Black Pepper to taste

Method
 

Step-by-Step Instructions
  1. Prepare the cabbage by removing the outer leaves, halving it, and finely slicing into thin strips.
  2. Core and slice the apples into approximately ¼-inch thick wedges and add to the bowl with cabbage.
  3. Toast nuts in a pan with olive oil for about 5 minutes until fragrant and golden brown, then cool.
  4. Make the dressing by mixing olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper in a jar and shake well.
  5. Toss the cabbage and apples in a salad bowl with half of the Parmesan and the prepared dressing.
  6. Allow the salad to rest for at least 10 minutes before serving, adding reserved walnuts and remaining Parmesan on top.
