Method
 

Directions
  1. Preheat your oven to 375°F (190°C) for even baking.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook for about 5 minutes until translucent. Stir in minced garlic and cook for an additional minute.
  3. Layer thinly sliced zucchini and yellow squash in a baking dish. Season each layer with salt, pepper, and thyme.
  4. Pour heavy cream over the layers. Sprinkle Gruyère and Parmesan cheese on top.
  5. Bake in the preheated oven for about 40 minutes until golden and bubbly.
  6. Let the gratin rest for about 10 minutes before serving.
