Ingredients
  

For the Bruschetta Topping
  • 2 cups Diced Heirloom Cherry or Grape Tomatoes Feel free to use any ripe tomatoes on hand.
  • 1 clove Garlic Can substitute with garlic powder.
  • 1/4 cup Basil Leaves Fresh oregano or parsley can be used.
  • 2 tablespoons Extra Virgin Olive Oil Light oils can be substituted.
  • 1 tablespoon Balsamic Vinegar Apple cider vinegar can be used as an alternative.
  • 1/2 teaspoon Salt Sea salt recommended.
  • 1/4 teaspoon Freshly Ground Black Pepper White pepper can be used.
For the Crostini
  • 1 loaf Demi French Baguette Gluten-free bread is a great alternative.
For the Whipped Feta Dip
  • 1 cup Whipped Feta Dip Made from blending feta cheese and yogurt.
  • 1 tablespoon Balsamic Glaze Can be homemade by reducing balsamic vinegar.

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine diced heirloom tomatoes, minced garlic, fresh basil leaves, extra virgin olive oil, balsamic vinegar, salt, and freshly ground black pepper. Gently stir together.
  3. Slice the demi French baguette into rounds, arrange them on a baking sheet, brush with olive oil, and rub with garlic. Bake for 6-8 minutes until golden brown.
  4. Blend the whipped feta dip ingredients in a food processor until smooth and creamy.
  5. Spoon the bruschetta topping over the whipped feta dip, drizzle with balsamic glaze, and garnish with extra basil leaves.
  6. Serve immediately with freshly baked crostini.
