  • 2 cups Cooked Chicken shredded rotisserie chicken
  • 4 cups Fresh Spinach can use thawed, drained frozen spinach
  • 8 oz Cream Cheese softened
  • 1 cup Mozzarella Cheese shredded, divided
  • 1 cup Sour Cream or Greek yogurt
  • 1 cup Chicken Broth or vegetable broth
For Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt
  • to taste Pepper
  • 1/4 tsp Red Pepper Flakes optional
For the Topping
  • 1 cup Breadcrumbs panko breadcrumbs recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, and chicken broth. Blend until smooth.
  3. Add garlic powder, onion powder, salt, and pepper, mixing well for even seasoning.
  4. Gently fold in the shredded chicken and chopped spinachinto the creamy mixture, incorporating half of the mozzarella cheese.
  5. Transfer the mixture to a greased baking dish, spreading it evenly.
  6. Top with the remaining mozzarella cheese and breadcrumbs.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown.
  8. Allow to cool for a few minutes before serving.
