  1. Cook the Pasta: Boil salted water, add shells, cook al dente (9-11 min), drain and rinse under cold water.
  2. Prepare the Filling: Mix pumpkin puree, ricotta, smoked Gouda, sage, salt, and pepper until smooth.
  3. Stuff the Shells: Fill shells with the mixture, place in greased baking dish, open side up.
  4. Make Brown Butter Sauce: Melt butter over medium heat until golden brown, whisk in cream, Parmesan, salt, and pepper.
