  • 8 oz Bacon diced
  • 1 Onion finely chopped
  • 2 cloves Garlic minced
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese freshly grated
  • 2 Eggs whisked
  • 1 tsp Black Pepper
  • 1 tsp Salt
  • 1 cup Frozen Peas thawed
  • 2 tbsp Fresh Parsley chopped (optional)

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water and cook the cheese tortellini according to package instructions, about 3-4 minutes. Drain and set aside.
  2. In a large skillet, heat bacon over medium heat until crispy, about 6-8 minutes. Drain excess fat, leaving 1 tbsp in the skillet.
  3. Sauté onion in the skillet for 5 minutes until translucent, then add minced garlic and sauté for an additional minute.
  4. In a bowl, whisk together heavy cream, Parmesan cheese, eggs, black pepper, and salt until smooth.
  5. Reduce skillet heat to low, add tortellini, and pour in the cream mixture. Stir gently for 3-4 minutes until the sauce thickens.
  6. Stir in crispy bacon and thawed peas, heat through for about 2 minutes.
  7. Garnish with parsley if desired and serve immediately.
