Steps
  1. Prepare the Fish: Rinse the fish fillets under cold water, pat dry, cut into bite-sized pieces, and season with salt and pepper.
  2. Sauté Aromatics: In a pot, heat oil over medium heat, add onion and sauté for 5 minutes until translucent.
  3. Add Garlic and Ginger: Stir in garlic and ginger, cooking for 1-2 minutes until fragrant.
  4. Incorporate Vegetables: Add diced tomatoes and bell pepper, cook for 5-7 minutes until veggies soften.
  5. Add Liquids: Pour in coconut milk and broth, mix and bring to a simmer.
  6. Season the Stew: Stir in fish sauce, lime juice, curry powder, season with salt and pepper, let simmer.
  7. Add Fish: Gently add fish pieces, cook for about 10 minutes until fish is opaque.
  8. Add Greens: Fold in spinach or kale, simmer for 2-3 minutes until wilted.
  9. Garnish and Serve: Ladle stew into bowls, top with cilantro and serve with lime wedges.
