  • 1 cup Jasmine Rice Can substitute with basmati rice or quinoa
  • 1 cup Vegetable Broth Chicken broth may be used for a heartier taste
For the Aromatics
  • 2 cloves Garlic Fresh is ideal, garlic powder works in a pinch
  • 1 small piece Ginger Ground ginger can substitute if fresh is not available
For Garnish

Method
 

Preparation
  1. Begin by gathering and prepping your ingredients, finely chop garlic and ginger.
Cooking Rice
  1. In a medium saucepan, combine jasmine rice and vegetable broth, bring to boil, cover and simmer for 15 minutes.
Sauté Chicken
  1. Heat oil in a skillet, season chicken with salt and pepper, cook for about 6 minutes on each side until golden and cooked through.
Add Aromatics
  1. Remove chicken, add minced garlic and ginger to skillet, sauté for about 1 minute until fragrant.
Make Coconut Sauce
  1. Pour in coconut milk and let simmer for about 5 minutes until slightly thickened.
Combine Ingredients
  1. Slice cooked chicken, return it to skillet, stir to coat in sauce and cook together for an additional 2 minutes.
Serve
  1. Serve fluffy jasmine rice topped with coconut chicken mixture and garnish with fresh herbs.
